The “Eat the Rainbow” tool is a colorful, interactive system designed to help kids learn about plant-based foods. It includes tracking chart, finding challenges, and engaging activities that make trying fruit and vegetables exciting!

Presented by Meiting Huang, a mother of 3 young children, ages 4, 9 and 11. She is a registered dietitian and a certified diabetes care and education specialist, currently working as a Diabetes Care Specialist at Renal and pancreas transplant division of Cooperman Barnabas Medical Center.
